1 large very ripe banana, mashed
1⁄2 teaspoon lemon juice
1⁄4 cup butter, softened
3 - 3 1⁄2 cups powdered sugar, sifted
Mix the banana and lemon juice together.
Cream the butter with 1 cup of the powdered sugar; then add the banana and enough remaining sugar to make the mixture thick and spreadable.
If you need to thicken the icing but don't want to add more powdered sugar use corn starch (sifted) 1/2t at a time.
